Lemon Crinkle Cookies

Recipe for Lemon Crinkle Cookies 1 cup butter softened to room temperature 1 cup granulated sugar 1 large egg 2 tsp vanila extract 2 tbsp lemon juice 2 tbsp lemon zest Yellow food colouring 2 1/2 cups all purpose flour 2 tsp baking soda 1 tsp salt 1/2 cup powdered sugar Cream together the butter and granulated sugar until light and fluffy. Add egg, vanilla, lemon juice, lemon zest, and yellow food colour, mix until smooth. Fold in the flour, baking soda, and salt until fully incorporated. Cover and chill the dough for at least 2 hours. On a baking sheet covered in parchment paper scoop 2 tbsp balls of dough and roll in powdered sugar before arranging on the pan. Bake for 13-15 minutes at 350°F. Enjoy!
