Strawberry Lemonade Cookies

Recipe for Strawberry Lemonade Cookies 1 cup butter softened to room temperature 1 1/2 cups granulated sugar 2 large egg 1 tsp lemonade liquid drink mix 2 drops yellow food colouring (optional) 2 1/2 cups all purpose flour 2 tsp baking powder 1/2 tsp salt 1 tbsp lemon zest Cream together the butter and granulated sugar until light and fluffy. Add egg and lemonade mix, and yellow food colour, stir until incorporated. Fold in the flour, baking powder, salt, and lemon zest. Cover and chill the dough for at least 1 hour. Scoop the dough into 2 tbsp balls and place on a baking sheet covered in parchment paper. Bake for 10-12 minutes at 350°F. 1 cup butter softened to room temperature 1 tsp lemonade liquid drink mix 1/2 tsp salt 2 1/2 cups powdered sugar 1 1/2 cup diced strawberries 3 drops red food colouring (optional) Cream together the butter, lemonade liquid drink mix, salt, and powdered sugar until smooth. Fold in the strawberries and red food colouring. Spoon the frosting onto fully cooled cookies and even out with a butter knife. Enjoy!
